Homemade Organic Apple Fritters!

Low oil, and packed with fresh apple goodness!

I think I have talked about it a few times.... my garden was pretty bountiful with apples and other fruits and veg! But what to do with all of the apples??


Make desert!



I love doughnuts, especially apple fritters and when I make them myself, they are both healthy and organic.... I love that about making my own food!!! Here's the starting line up!



The batter is easy honestly:


1 1/2 cups of organic white flour

1/4 cup of coconut sugar

1/4 tsp of salt

1 Tsp of baking soda

1 Tsp of apple cider vinegar

1 organic egg

1/3 cup of nut milk 2 Tbsp of cinnamon

1 1/2 cup of diced apples.


The batter is quite simple dry ingredients together, mix in the wet and don't over mix. The apples should be the last to the party for just a quick coating to them before the pan.


 



These do need to fry for a while but I typically do this in a shallow pan and cook these the rest of the way through in the oven. So this is the warning to start a 350 degree oven :)



I used avocado oil with a nice neutral flavour and fried the fritters on both sides until golden brown.


Then bake for about 20 minutes!



These are amazing with a light icing... drippy icing, the kind you drizzle on top while still warm.... do I have your attention? The icing sugar is easy! simply some dairy free milk and icing sugar.



I show you this picture because you can end up with clumps! You need to work these out... a speed mixer works or using a fork to push these against the edges to break apart... however you do it... you aren't done yet, until they are gone!


When you have finished, these are the best fresh from the oven... if you have more than you need and put some in the fridge to store... please heat up before drizzling the icing! You will thank yourself for the restraint!
