Honey Teriyaki Egg Roll Tacos

Yet another use of egg roll wrappers for a fun and easy dinner.

I really liked how these turned out, they were crunchy and fun to eat and surprisingly filled the whole family up using only 2 chicken breasts...






This marinade was really really tasty and I will need to try it out again on a main course. I say that because while these were packed with flavour, each one was a small bite and the flavour left me craving more... it was that good!


It consisted of 1/4 cup of organic soy sauce, 1/4 cup of melted honey, 1 Tbps of garlic powder and 1 Tbsp of dried ginger. The Arrowroot starch is required shortly.





Place everything but the arrowroot starch in a pan on the stove and bring to a simmer. Once simmering add 1 to 2 Tbsp of arrowroot starch to thicken the mix to be glaze like, but no thicker... so go slow. Once this is done pour over the chicken and place in a 350 degree oven. The should take about 30 minutes to reach the proper internal temperature... always check for that rather than going off my timing as there are so many variables that can change cooking time.





I used an upside down muffin tin to shape the taco shells. I sprayed them with some high heat oil and then placed them in the oven with the chicken. Keep a watchful eye as these get way too hard to eat if over cooked. These ones were the perfect colour and crunch so aim for this colouring.





I also whipped up the Asian slaw while the chicken and shells were cooking. Typically this takes an even amount of soy sauce, rice vinegar and sesame oil. perhaps 1 Tbsp of each for this small amount of slaw.





Chicken's out of the oven, dice it up and it becomes the first layer in the taco. I was sure to add some of the drippings in there for that added flavour.






Layer on the Asian slaw and serve! Do you have kids that are picky eaters? no problem here is the kid friendly version that takes zero extra time....









I had some left over bacon from breakfast I crumbled up, some romaine lettuce and cheese... The C2's were happy! All and all this was a different and fun dinner that the whole family enjoyed! I would put this at the 40 minute mark all in so very doable for a weeknight! I hope you give it a try.
