Jerk Chicken and Dirty Red Bean Rice

Who likes spice? Me too! That savory deep spice of jerk seasoning is incredible and like no other! My husband craves it, and in fact puts jerk sauce on everything even before he tastes it to see if it would be tasty without it... but I digress. This dish was delicious, had all of the Caribbean vibes of an authentic dish of travels long gone.. well at least for the last year!





I simply cooked chicken thighs, skin on with jerk seasoning. Oven temp 350 degrees and cooked these for about 35 minutes. All oven's are different so make sure you've hit the appropriate internal temperature for chicken thighs. Because of the spice associated with the meal, I thought it appropriate to do a cool tomato salad with simple green onions, avocado oil and a sprinkling of jerk seasoning to keep the flavour consistent!



As always, this meal is natural and organic with organic kidney beans and mushrooms and rice. The Chicken was also antibiotic free and natural. I always make rice the C2's can eat... lets call them "purest's" aka needs it plain... lol For all my rice dishes I cook the rice plain and incorporate the rice into the other ingredients after the fact.... its not the intended way... but it keeps my family dinners working.




While my rice cooked I sauteed the red beans, mushrooms and green onion in some jerk seasoning. Once this is cooked well, incorporate into the rice. It should have enough seasoning to flavour the rice, but taste test and add according to your spice tolerance.




this rice has a slight bite, but nutty flavour from the beans and adds ten fold to this meal! Its an absolute requirement.






This meal had crazy flavour with all pieces complimenting each other well! In all this took 40 minutes start to plate and is a cro9ud pleaser! (if you could feed a crowd...my crowd is my family) Either way, this is delicious and worth the minimal effort.


Recipe:


Chicken


bake chicken thighs covered in jerk seasoning and avocado oil... minimum 35 minutes at 350 degrees.


Rice:


2 cups of rice with 4 cups of water and 2 Tbsp of oil in a microwave safe dish with a lid. Cook on high in the microwave for 20 minutes.


cook 1 can of red beans and 1 cup of cut mushrooms in a pan to sauté with some sliced onions and about 2 Tbsp of jerk spice. blend with 2 cups of "cooked" rice (not the whole pot).. taste and adjust spice as you see fit.


Tomato salad:


Slice up tomatos finely

dice green onions

place in a bowl with some avocado oil and toss, when well coated sprinkle jerk seasoning on the salad and toss again.
