Smoked Beef Pot Pie

A Dairy free delicious meal that hides a ton of veggies

Who love pot pies? They love you back, especially when adorned with hearts! This pot pie had hormone and steroid free beef that was slow smoked prior to joining the party and a series of healthy veggies that do not take away from the amazing smokey flavour in the slightest. The crust is deliciously dairy free so the perfect meal! Lets get started.





I tossed these beautiful cubes in my homemade seasoning... I will share it one day but lets say it's both smoky and sweet. I placed these on the smoker on smoke for 1 hour and then added the temp to 200 degrees for another 2 hours. You want these to be "almost" cooked because remember they will see the oven for another 15 minutes in the pie itself




While these cook, lets work on the dough.



The dough is 1/2 a cup of plant based shortening and 4 Tbsp of vegan butter substitute. I paired this with 2 1/4 cup of organic white flour and cut the flour into the butter until there are small pellets of dough.



I added less than 1/2 a cup of seriously cold water to make this dough then form a ball. kneed until smooth, and then form two balls and place in the fridge for 40 minutes minimum.




I wanted this dish to be veggie packed and it obviously needs potatoes to be authentically taste like it should. I cubed up some organic russet potatoes and boiled them on the stove. You only want to cook these until al dente since they too will see the oven for 15 minutes within the pie.




Beyond the potatoes, I added some frozen organic kale and corn, mixed with fresh sliced organic mushrooms and asparagus... I took a look at my pan and decided to stop there... LOL you could add more, but I wanted room for my slow smoked beef!!!




Once my potatoes were done I added them to the pot. From here I totally cheated but it worked.... I made 2 packs of package gravy... dairy free of course and there are great organic versions too.





From here I formed the dough into pie dish... just roll it out and push it into the dish as best you can.. there is so much shortening in these the bottom of the dish does not matter as long as you have full coverage.. an you can build up the crust along the edge of the dish... don't sweat it!




Will all components made, it's time to layer up this dish... some veg, then Meat, then more veg and pour the gravy on top.



Use the remaining dough to create the upper crust, in my case hearts!!!





Place this in a 400 degree oven for 15 minutes!


This cooks to perfection, the crust is flaky and delicious and the smokey flavour of the beef is honestly better day two! Seriously a great meal... hearty and delicious... I served this with a salad and it was perfect!
