The healthiest cookies EVER!

I so enjoy where taste, and health collide! Sometimes it's easy and sometimes it takes some effort to source great ingredients based on what health focus you have. These cookies aren't gluten free or sugar free but they are dairy free and boasts some veggie power and secret ingredient that hopefully won't be secret for long Pure-Le Natural - Liquid greens Chlorophyll.





Here is the health line up. an organic brown banana instead of egg, some organic zucchini and liquid chlorophyll.








I started with 3/4 cup of Crisco golden which if you haven't used this in a while is completely plant based.... the box actually comes with an amazing vegan pie crust recipe I can't wait to try. I used 1/4 cup of organic coconut sugar and 1 cup of organic cane sugar. Cream this together well and add in 1 Tbsp of vanilla.




I then added 3/4 cup of shredded zucchini to the mix and blended and....





2 TBSP of Pure-Le Natural Liquid Greens Chlorophyll. This has the taste of dark chocolate so it's perfect for sweet dishes and is super concentrated. 1 TBSP with water is the recommended portion if you choose to just drink this for the amazing health benefits but why not serve it to our kids in cookie form too! Have you heard of Chlorophyll before? Well it comes from many green plant forms but its benefits are renowned for preventing damage done to genes by aflatoxins. It is an antioxidant, highly alkaline and can increase energy!! A pretty healthy cookie right?



I then added my over ripe banana and 2 TBSP of almond milk, before adding in the dry ingredients 1 3/4 cups of organic white flour, 1Tsp of salt, and 3/4 Tsp of baking soda..... Mix well and then add in some organic dairy free semi-sweet chocolate chips!!





I wanted to make these a breakfast cookie of sorts so while I pre-heated the oven to 375 degrees, I used about 2 TBSP sized scoops for each cookie. I used parchment paper as the base to save any additional oil or butter substitute and these came out great after about 15 minutes given their size. Keep an eye on them after about 10 minutes as they will still look a bit moist when cooked, you are watching for the bottom edge to become slightly brown.




Perfect! and while the C2's watched all the ingredients go into these and worried they would not be a tasty treat, when I convinced them to try, they loved them and said they couldn't taste any of that "healthy stuff"! Perhaps I should have not made these in front of them at all to keep the ingredients my secret! It was a win either way. I hope you give it a try! The Recipe:


Cream 3/4 cup of Crisco golden shortening

1/4 cup of coconut sugar

1 cup of cane sugar

1 TBSP of vanilla

once creamed add in


2 TBSP of Pure-Le Naturals Chlorophyll

3/4 cup of shredded zucchini and 2 TBSP of almond milk


once mixed add in the dry ingredients:

1 3/4 cups of organic white flour

1 Tsp salt

3/4 tsp baking soda

1 cup of dairy free semi sweet chips


pre4-heat the oven to 375 degrees and bake for 15 minutes for the large 2 Tbsp spoon sized cookies.
