Homemade Indian Spice Apple Chutney, made with Apples from my Garden

So I've talked a lot about my garden and how much I love to make food with the fruits and veggies that a grow. I have a lot of green apples ready to go and finding a variety of different ways to use them is a fun challenge that I enjoy. I have made tomato chutneys before and I have made apple pie filling but I have never found a savoury chutney I loved until now.

I started by dicing up some apples about 4 KG to be precise and some of the green onion also from my garden. Some people suggest peeling the apples but I wanted the extra texture so I left the peels on. I put 2 Tbsp of lemon juice on the apples until we were ready to start boiling.

Here was the spice lineup that really made the flavour happen. The start was 2 cups of rice vinegar and 2 cups of apple cider vinegar. This recipe took 1 cup of coconut sugar, and I added about 2 Tbsp of kosher salt, 4 Tbsp of cumin, 4 Tbsp of curry powder, 2 Tbsp of garlic powder, 2 Tbsp of crushed ginger and 2-3 Tbsp of dried chili peppers depending on how spicy you like it. I also had some fresh cilantro and thought what the heck, lets put that in there too.

I started this on a slow boil on the stove. At one point I added about 1 cup of water to the mix to ensure we had enough liquid to manage to render down the apples. All in I probably had this on the stove for 1 1/2 hours.

Once done I left to cool slightly but not completely while I readied my sterilized jars and started to boil a stock pot of water. I do not have a pressure canner so I end up kickin' it old school with the boiling method which I find works great anyways.

I ensured the lids and rings were clean and tight and boiled each can for about 20 minutes. I pulled them out of the water and left them undisturbed until completely cool and then checked to ensure the lid sucked down and no longer popped.

I was quite impressed with my little haul of chutneys!

As you know I am unable to eat dairy, but there are some great vegan cheeses out there that while they may not taste exactly like cheese are suitable substitutions. I found a brie like "cheese" that worked well for a fun cheese board I made, showcasing my new Indian Spiced Chutney! Where there is a will there is a way to still eat all the things you love and miss with dietary restrictions!
